Spicy Pineapple Guava BBQ Chicken and Mango Salad

Ingredients for Spicy Pineapple Guava BBQ Chicken:
  • 3 chicken breasts or thighs
  • 3 tbsp. Grace Jerk Seasoning Mild
  • 2 tbsp. Grace Caribbean Traditions All Purpose Seasoning
  • 1 tbsp. chopped garlic
  • 2 tbsp. freshly squeezed orange juice
  • ¼ cup Tropical Rhythms Pineapple Guava Juice
  • 2 peeled mashed guava
  • ¼ small scotch bonnet pepper
  • 2 tbsp. Grace Jerk Marinade
  • 3 tbsp. olive oi
Ingredients for Grilled Pineapple Mango Salad:
  • 3 slices of pineapple
  • ¾ cup diced mango
  • 3 tbsp. olive oil
  • 3 ripe guava
  • 2 tbsp. vinegar
  • 3 cups of spinach or your choice of green
Directions for Spicy Pineapple Guava BBQ Chicken:
  1. Combine all ingredients together in a bowl, mix well and let marinate in fridge for 4 to 24 hours.
  2. Grill Chicken with medium heat turning often until done.
  3. Base with new batch of Grace Jerk Marinade as needed.
Directions for Grilled Pineapple Mango Salad:
  1. Whisk olive oil, vinegar, guava in bowl.
  2. Grill pineapple, then dice.
  3. Drizzle dressing mango, pineapple, guava mixture onto bed of greens and pineapple.
