Jerk BBQ Shrimp with Pineapple and Peppers Recipe (Video)

PREPARATION TIME : 1.5 hours

COOKING TIME : 40 minutes

SERVES : 4 people

INGREDIENTS

• 1 pound medium shrimp, cleaned and deveined
• 4 cloves garlic, chopped
• 1 teaspoon Dried Jerk Seasoning
• 1 tablespoon Grace Jerk Barbecue Sauce
• 1/4 teaspoon salt (optional)
• 1/4 cup Grace Vegetable Oil
• 2 tablespoons fresh lime juice
• 1 cup pineapple, cubed
• 1/4 cup red bell peppers, julienne
• 1/4 cup green bell peppers, julienne
• 1/4 cup yellow bell peppers, julienne
• 1/2 cup fish stock
• 1/2 cup cream sherry

DIRECTIONS

1. Season shrimp with garlic, Grace Jerk Barbecue Sauce and salt, if used.

2. Heat skillet with Grace Vegetable Oil. Add garlic and Shrimp and sauté until shrimp are slightly Pink.

3. Add lime Juice, pineapple, sweet pepper, jerk Seasoning and cook for a further minute.

4. Add cream sherry and adjust seasoning, if necessary; simmer for a minute.

5. Remove from flame and serve hot with your favourite starch.
