Cajun Chicken Pasta

2 tbsp olive oil
2 Boneless skinless chicken breasts, cut into 1” cubes
2 tbsp cajun seasoning
2 cups penne pasta
2 tablespoons butter

1 tbsp butter
½ onion finely chopped
4 garlic cloves crushed
1 tbsp Cajun seasoning
1½ cups heavy cream
1-2 tsp lemon juice to taste
2 tbsp Grace Hot Pepper Sauce
½ cup grated parmesan cheese
salt and pepper to taste
Parsley to garnish

Cajun Chicken Pasta L

1. Fill a large pot with boiling water and salt. Add pasta and cook until chewy but soft. Once ready, rinse with cold water, drain and set aside.
2. Heat a large frying pan and add olive oil. Toss chicken breasts in cajun seasoning and sear chicken until golden brown. Once ready, remove and set aside.
3. In the same pan, add butter, onion, red bell peppers and garlic. Cook until soft and translucent. Add cajun seasoning, Grace Hot Pepper Sauce, cream and lemon juice. Simmer until sauce thickens. Add parmesan, let melt, then add the chicken and pasta back in. Toss until evenly coated, garnish with fresh parsley and serve.
