Mango Salad with Chili Lime Jerk Chicken

INGREDIENTS:

4 clementine oranges, peeled
4 cups spinach
2 mangos, chopped
2 cups cherry tomatoes, halved
2 tbsp cilantro, chopped
1 350 mL bottle of Jerk Marinade
1 lb boneless, skinless chicken breast
1 head romaine lettuce, rinsed and chopped
1 red, orange or yellow bell pepper, chopped
1 avocado, sliced
1 cup cashews
½ cucumber, sliced
⅓ cup red onion, diced
Your choice of salad dressing or vinaigrette

DIRECTIONS:

1. Add the chicken and jerk marinade into a zip lock bag. Mix well to ensure the chicken is thoroughly covered in the marinade. Marinate for at least one hour but up to 24 hours.
2. Combine all of the ingredients in a large salad bowl. Add the sliced chicken on top.
3. Drizzle with your choice of salad dressing or vinaigrette and serve!
