Grilled Jerk Shrimp Taco and Mango Salsa

INGREDIENTS:

Tacos

• 2 Lb Fresh Shrimp, Peeled and Deveined
• 1 Tbsp of Garlic Purée
• 1 Tbsp of Grace Jerk Seasoning
• 100 mL of Grace Coconut Water
• 1 Tbsp of Olive Oil
• 12 Flour Tortillas (Grilled)
• 1 cup Shredded Lettuce
• ¼ of a Red Bell Pepper, Julienne
• 2 Tbsp Mayonnaise
• Salt and Pepper, to taste

Grace 100% Pure Coconut Water
Grace Jerk Seasoning

Mango Salsa

• 1 Semi-Ripe Mango, peeled and diced
• 1 Avocado, peeled and diced
• 1 Tomato, diced
• ¼ cup of Fresh Chopped Green Onion
• 2 Tbsp of Fresh Lime Juice, to taste
• 1 Tbsp of Olive Oil
• Grace Coconut Water, to taste
• Salt and Pepper, to taste

DIRECTIONS:

1. In a bowl, toss together the cleaned shrimp, Grace jerk seasoning, garlic purée, olive oil, and Grace coconut water – set aside to marinate 5-10 minutes.
2. Start heating grill make sure it hot!!!
3. In a large bowl, toss together all the ingredients for your salsa (mangoes, tomatoes, avocado, green onion, Grace coconut water and olive oil) allow to sit while you grill the shrimp.
4. Grill the shrimp on the hot grill for about 2 minutes on each side, remove to a bowl to cool. Mix in mayonnaise, add salt and pepper to taste
5. Warm up Flour tortillas by grilling them, getting nice grill marks
6. To plate: assemble tacos (tortillas, shredded lettuce, shrimp and red peppers. Serve generous scoop of mango salsa.
