Spicy Pineapple Guava BBQ Chicken and Mango Salad

INGREDIENTS FOR SPICY PINEAPPLE GUAVA BBQ CHICKEN:

3 chicken breasts or thighs

3 tbsp. Grace Jerk Seasoning Mild

2 tbsp. Grace Caribbean Traditions All Purpose Seasoning

1 tbsp. chopped garlic

2 tbsp. freshly squeezed orange juice

¼ cup Tropical Rhythms Pineapple Guava Juice

2 peeled mashed guava

¼ small scotch bonnet pepper

2 tbsp. Grace Jerk Marinade

3 tbsp. olive oil

Tropical Rhythms Pine guava Juice
Jerk Seasoning Mild
Grace Seasoning Allpurpose
INGREDIENTS FOR GRILLED PINEAPPLE MANGO SALAD:

3 slices of pineapple

¾ cup diced mango

3 tbsp. olive oil

3 ripe guava

2 tbsp. vinegar

3 cups of spinach or your choice of green

DIRECTIONS FOR SPICY PINEAPPLE GUAVA BBQ CHICKEN:

1. Combine all ingredients together in a bowl, mix well and let marinate in fridge for 4 to 24 hours.

2. Grill Chicken with medium heat turning often until done.

3. Base with new batch of Grace Jerk Marinade as needed.

DIRECTIONS FOR GRILLED PINEAPPLE MANGO SALAD:

1. Whisk olive oil, vinegar, guava in bowl.

2. Grill pineapple, then dice.

3. Drizzle dressing mango, pineapple, guava mixture onto bed of greens and pineapple.
