Jerk Cauliflower Wings

Ingredients:

1 head of cauliflower
½ cup flour
2 tbsp cornstarch
1 tsp garlic powder
1 tsp black pepper
½ tsp dried thyme
2 large eggs, for an egg wash
¼ cup olive oil
¼ cup low sodium soy sauce
2 tbsp Grace Jerk Seasoning
2 tsp honey
½ lime, squeezed

Directions:

1. Preheat the oven to 450˚F and line a large baking sheet with parchment paper or a silicone baking sheet.

2. In a large bowl, combine flour, corn starch, salt, garlic powder, black pepper, thyme and stir well to combine.

3. Dip cauliflower into eggs ensuring there is an even coat. Then dredge in flour mixture until thoroughly coated. Shake off excess flour and place onto a baking sheet with enough room so they aren’t touching. Bake for 25 minutes or until golden brown.

4. In a food processor add honey, Grace Jerk Seasoning, lime juice and blend. Pour into a bowl and set aside.

5. One the cauliflower is roasted, transfer to the bowl and pour jerk sauce and gently toss until they are well coated. Transfer to a serving platter, garnish with chopped parsley
and serve with sauce.
