Quinoa Fritters with Mango Chutney

Ingredients:

1 cup Grace Quinoa
½ cup grated parmesan cheese
2 large eggs
½ cup all-purpose flour
½ tsp smoked paprika
1 small onion finely minced
1 tsp salt
Black pepper to taste
Vegetable oil for frying
Cilantro, for garnish

For the chutney:

1 mango, diced
¼ onion, diced
2 tbsp brown sugar
1 tsp grated ginger
1 tsp of grated clove
1 tsp of grated nutmeg
2 tsp white wine vinegar
1 tsp Grace Scotch Bonnet Hot Sauce
A pinch of salt and red pepper flakes

Directions:

1.In a saucepan, add the chutney ingredients and cook until the flavours have combined and reduced. Set aside.
2. Cook Grace Quinoa following package instructions and allow to cool completely. Once cooled, place into a large bowl and add eggs, parmesan cheese, eggs, flour, onion, paprika and salt and pepper to taste. Roll into small three-inch-round fritters and set aside.
3. Shallow fry fritters in a large skillet with oil filling up ½” in depth. Cook each side until golden brown. Once cooked, dab the oil out with a paper towel.
4. Place fritters on a large plate, serve with mango chutney and garnish with parsley and chili flakes.
