Jerk Turkey

INGREDIENTS:

Turkey Ingredients:
10-12 lb turkey
4-5 tbsp Grace Jerk Seasoning (Mild, Hot or Scotch Bonnet)
¼ cup Grace Honey
1/3 cup say sauce
2 tbsp lemon juice
1 tbsp olive oil

Stuffing Ingredients:
2 cups chopped onions
1 ½ cups chopped celery
½ cup butter, cubed
12 cups unseasoned bread stuffing or dry bread cubes
2 ¼ tbsp Grace Jerk Seasoning
2 ½ cups boiling water

DIRECTIONS:

Stuffing Prep:
1. Stir all ingredients in a bowl until it’s a uniform mixture

Turkey Prep:
1. Preheat oven to 350 F
2. Remove gilets from the turket and rinse the turkey inside and out
3. Combine Grace Jerk Seasoning, honey, soy sauce, and run liberally over the interior and exterior of the turkey
4. Fill the inside of the turkey with stuffing. (Note: the stuffing will expand during cooking so do not overfill)
5. Brush the turkey with lemon juice and olive oil
6. Tuck the wing tips under the body of the turkey and tie the legs together
7. Place on a baking sheet and fit it over a roasting pan with 2 cups of water
8. Roast turkey for anout 2 ½ hours. Turkey is ready when the deepest part of the breast measures 165-170F
