Quinoa Salad

INGREDIENTS:

2 cups Grace Whole Grain Quinoa⁣
3 cups water⁣
1 can black beans⁣
1 can chickpeas⁣
1 red bell pepper⁣
1 mango⁣
1 avocado⁣
½ red onion⁣

¼ cup chopped cilantro⁣
¼ cup chopped mint⁣

DIRECTIONS:

1. Rinse quinoa under cold water. Boil in a pot over medium heat for about 10 to 15 minutes minutes. Drain and set aside⁣
2. Combine ingredients together in a bowl. Season with salt, pepper and olive oil.
