INGREDIENTS:
Your choice of fish
1 packet Grace Fish Tea Soup Mix
8 cups water
4 plantains, sliced
2 potatoes, peeled and chopped
2 cups corn
1 cup sweet potato
4 carrots, chopped
4 scallions, chopped
2 cloves of garlic
Pinch of salt
Pinch of pepper
Fresh herbs for garnish
DIRECTIONS:
1. Clean and de-bone the fish.
2. Bring the water to a boil. Add fish and simmer until soft, about 30 minutes. Strain the fish and set aside.
3. Add the packet of soup mix to the fish broth and bring to a boil. Add the plantains, potatoes, corn, sweet potato, carrots, scallions and garlic. Add salt and pepper to taste.
4. Reduce the heat and simmer for another 10 minutes until the vegetables are tender. Stir in the fish.
5. Remove from the heat. Garnish with fresh herbs and serve hot.
