Quinoa Salad

INGREDIENTS

2 cups Grace Whole Grain Quinoa
3 cups water
1 can Grace black beans
1 can Grace chickpeas
1 red bell pepper
1 mango
1 avocado
½ red onion
¼ cup chopped cilantro
¼ cup chopped mint

Directions

1. Rinse quinoa under cold water. Boil in a pot over medium heat for about 10 to 15 minutes minutes. Drain and set aside
2. Combine ingredients together in a bowl. Season with salt, pepper and olive oil.
